Gajar Halwa Recipe
Description: A traditional Indian dessert made with grated carrots, milk, sugar, and ghee, flavored with cardamom and garnished with nuts.
Ingredients:
- Carrots (grated): 1 kg
- Milk (full-fat): 1 liter
- Sugar: 3/4 cup (adjust to taste)
- Ghee (clarified butter): 3-4 tbsp
- Cardamom powder: 1/2 tsp
- Cashews, almonds, pistachios: 2-3 tbsp (chopped)
- Raisins: 1-2 tbsp
Step-by-Step Process:
- Grate the Carrots:
Wash, peel, and grate the carrots using a fine grater. - Cook Carrots in Milk:
- In a large, heavy-bottomed pan or kadai, add the grated carrots and milk.
- Cook on medium heat, stirring occasionally, until the milk reduces and thickens. This takes about 30-40 minutes.
- Add Sugar and Ghee:
- Once the milk is almost absorbed, add sugar.
- Stir well; the mixture will release some liquid again due to the sugar. Cook until the liquid evaporates.
- Add ghee and sauté the halwa for a few minutes to enhance the flavor and texture.
- Add Flavorings:
- Mix in cardamom powder for aroma.
- Add chopped nuts and raisins.
- Cook and Garnish:
- Cook the halwa for a few more minutes until it turns glossy and leaves the sides of the pan.
- Garnish with more nuts and serve warm or chilled.
Tips:
- Use fresh, tender carrots for the best flavor.
- You can replace sugar with jaggery for a healthier twist.
- Add khoya (mawa) for a richer version of gajar halwa.
